เปปโตน (Peptone) คือ โปรตีนสกัด (Protein) ที่ถูกย่อยให้โมเลกุลมีขนาดเล็กลง มีกรดแอมิโน (amino acid) ทริปโตเฟนเป็นส่วนประกอบจำนวนมาก ใช้เป็นส่วนผสมของอาหารเลี้ยงเชื้อต่างๆ เช่น อาหารเพาะเลี้ยงเห็ด อาหารเพาะเลี้ยงเชื้อรา หรือแบคทีเรีย เป็นสารอาหารที่จุลินทรีย์ต้องการเพื่อใช้ในการเจริญ นอกจากนั้น "เปปโตน" ยังใช้เป็นส่วนผสมในการผลิตหัวเชื้อ การเพาะเห็ด ใช้สำหรับการผลิตเอนไซม์ วัคซีน แอนติบอดี สเตอรอยด์ และผลิตภัณฑ์อื่นๆ

It contains high tryptophan content used as culture media ingredient in variety of media. It can also be used for commercial production of enzymes, vaccines, antibiotics, steroidsand other products.

Peptone, Bacteriological is prepared by enzymatic digestion of selected fresh meat. Being highly nutritious it supports good growth of wide variety of microorganisms and can be used for identification of bacteria by performing various biochemical tests. As peptones confer nutritional benefit, especially at low dilution rates, for the recombinant cell lines it have been recently used as medium additives for the production of a recombinant therapeutic protein in high density perfusion cultures of mammalian cells .
